Cottage Oatmeal Cookies
Preheat the oven to 350 or if using the Aga use the rack on the baking oven
2 cups olive oil or vegetable oil (also quite lovely with butter)
2 cups white sugar
1 cup brown sugar
2 teaspoons vanilla
4 eggs (room temperature)
4 1/2 cups oatmeal (rolled oats--I use instant)
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon pumpkin pie spices
1 1/2 cups craisins
1/2 cup coconut
1 cup pecans
1 cup white chocolate chips
Line 4 cookie sheets with silpats or parchment
Mix oil with eggs and sugars, add remaining ingredients and mix well.
Using a 3 inch ice cream scoop, place 6 scoops of dough per cookie sheet. Yes you could probably make them smaller, but I am not sure why...
Yield-21-24 cookies (not nearly enough)
Sometimes I freeze these thinking I will not eat them all so fast--quite good frozen
Bake 16-20 minutes until light brown but still rather pale in the center.
Let cool.
