Lemon Curd and Lemon Marmalade...


I can think of no taste I like better than lemon. My mother was the same way so I guess I just grew up with it. Lemon curd is a creamy spread for your scones, toast, muffins or bagels. It is the perfect filling for cakes. When I am entertaining I like to put out a platter of strawberries and Digestive Biscuits with an open jar of lemon curd and a tiny knife. So my guests can spread a dollop on their cookie or dip their strawberries. There is never any left over ...

Lemon Marmalade takes your standard marmalade up a notch. Tangy and fruity at the same time. Of course it is delicious on toast and scones and muffins. But I like to use it as an ice cream topping over very good quality vanilla ice cream. It is also a rather surprising and delicious taste when spooned over a roast pork.
