Estate of Mind White Chocolate Oatmeal Cookies

1 cup canola oil

1 cup white sugar

1 cup brown sugar

2 eggs

1 tablespoon coconut extract

2 cups flour

2 ½ cups quick oatmeal that you have processed in your food processor until smooth

½ teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

1 cup craisins

1 ½ cups coconut

1 ½ cups pecan

4-6 oz. White chocolate bark chipped into pieces ¼-1/2 inch

Cream oil and sugars; add eggs and extract and beat. Mix ½ flour into this mixture. Add salt, baking powder, baking soda. Mix well.

Take remainder flour and oats and mix with coconut, craisins, and pecans. Pour batter over this and mix by hand.

Prepare cookie sheets with Silpats or parchment paper.

With a 1 ½ inch scoop, scoop dough on sheets. Bake at 350 for 15 minutes.

After the first 7 minutes, remove cookie sheet from oven and flatten the tops of the cookies with a spatula.

Rotate cookie sheet and return to the oven and continue baking for 8 minutes or until lightly brown. These cookies freeze well and are best eaten warm or frozen.
